Boston Baked Bean Croquettes

  • 2 cups baked beans
  • 1 onion, peeled and minced
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 1 egg, well beaten
  • 2 tablespoons water
  • cracker, finely crumbed
  • oil or fat, for frying

  • Mash the beans with a fork; work in the onion, salt and pepper.
  • Shape into croquettes.
  • Mix the egg and water.
  • Preheat oil or fat to 375F in a large skillet or fryer.
  • Roll the croquettes in the cracker crumbs, then in egg wash, followed by another roll in cracker crumbs.
  • Fry croquettes in hot fat until delicately browned, about a minute; drain on paper towels.
