Wow, I made these delicious fritters for lunch today Muffin Goddess and boy were they good. Made exactly as written, but had to use romain lettuce hearts, as my spinach was bad. The vinaigrette was wonderful, savory and velvety, it complimented the parsnip fritters very well. The fritters were delicious, sweet and tender, encased in a tasty batter.
