  • Mix all ingredients EXCEPT the 1 beaten egg and cracker crumbs.
  • Shape into croquettes.
  • Dip into crumbs, beaten egg, and crumbs again.
  • Chill.
  • Fry in deep fryer or deep pot with oil.
  • Drain.

  1. I love how easy this recipe is. It turned out great. Normally I use Tapastips' recipe, which uses cured ham, and now I found the perfect cheesy compliment I can serve together with them.
     
  2. Even though these turned out quite tasty, I did have problems with the mix being quite wet and had to add more flour. I used a food processor to mix it all up. Next time I might adjust the liquids down somewhat so as not to need extra flour. Were quite popular with the family.

I work for a bank in Brandon, MS. My hubbie is a police officer in Jackson. I have a great cookbook that is called "Any Blonde Can Cook". It is awesome. I love to cook...when I have the time. My family keeps me pretty busy though. I enjoy reading books, going to the movies, traveling, spending time with my family, cooking, playing with Lizzie Belle, tanning, and getting my nails done.
