- 1 lb pork shoulder, cubed
- 1 (14 ounce) can bamboo shoots, drained and thinly sliced
- 1 large egg, beaten
- 1 cup cornstarch
- 3 green onions, thinly sliced
- 1 green pepper, thinly sliced
- 1⁄2 teaspoon sea salt
- 1 teaspoon sesame oil
- 2 teaspoons rice wine or 2 teaspoons dry sherry
- 2 garlic cloves, finely chopped
- 2 1⁄2 cups peanut oil

Sauce
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 3 tablespoons malt vinegar
- 1 teaspoon cornstarch
- sea salt and white pepper
directions
- in a bowl mix salt, rice wine or sherry and egg. stir in pork to evenly coat. remove pork and roll in cornstarch to coat evenly. in a wok, heat peanut oil until hot, deep fry pork 5 minutes until crispy. use a slotted spoon to remove pork from oil, drain pork on paper towels.
- pour out oil from wok leaving 2 tablespoons, add bamboo shoots, green onions, green pepper and garlic and stir fry for 3 minutes. stir in pork and heat thoroughly.
- To make Sauce:.
- in a saucepan stir together, sauce ingredients and place over medium heat and cook for 4 minutes, stirring constantly.
- pour sauce over pork and vegetables.
- sprinkle with sesame oil and serve.

Good, Solid Entree for a Chinese themed dinner or just when the urge for Chinese food strikes. Using a wok works best but a frying pan on very high heat works as well. This is a quick and easy dish that I served over rice along with egg rolls, a salad and fortune cookies I got at the store. Would definitely make again and again!! Thanks!!
