Colorado Camper's Trout

"I love fresh fish fried and this recipe is really yummy! I found this recipe in the Colorado Cache Cookbook back in the 80's. The book said, "This is the best way to eat trout: when it is stream fresh, it's hard to beat!" I agree! This recipe is great for cod too. Prep and cook times are approximate, depending on how long you want to fry your fish."

  • Fry, drain and nibble on bacon while doing next step!
  • Saute onions in bacon grease, drain, salt and nibble while preparing the fish.
  • Coat fish well with mixture of corn meal, flour, salt and pepper.
  • Fry fish in hot grease until done and very crisp.
  • Garnish with onion and bacon.

  1. This is a wonderful recipe! I cooked this on an outside BBQ burner in a cast iron skillet. Very tasty. Good way to fix trout even for folks who don't like trout! Surprise them!
     
  2. Colorado Cache is one of my very favorite cookbooks and this is one of my most-used recipes in it. I used it almost exclusively when we lived in the Rocky Mtns and caught fresh trout for dinner several nughts a week, so I can vouch for its authenticity! ;)

I love to cook, but don't have a lot of time to do it, since I work full time. I like to try a new recipe every Saturday, if time allows. <br> <br>I have one grown son and three grandaughters ages 16,10 and 3. The ten year old has won many medals in gymnastics meets over the past few years.
