Loved this, although I had to change quite a bit based on my pantry... So here goes... No creamed corn, so a cup of frozen corn that I mashed up with a stick blender... To get the moisture back I mixed in a can of cream of celery soup, and used a full cup of flour rather than 3/4. Had to use dried onion rather than fresh, and left out the jalapeno just as a personal preference and so the kids would eat it. To get a little more spice I added about a quarter teaspoon fresh ground pepper and a bit of Old Bay. My husband, who HATES hush puppies, ate 3 of these, which I made very large. Will definitely make again with my changes.

LOVED IT!!! I only eat fried catfish(as far as fish goes) but have never been able to fry it for myself just the way I like it.I've always had to go out and buy it already fried(luckily, I live in south Louisiana) :) but now I can do it whenever I like! And for the hushpuppies- my fiance said he never liked them- 'til now. I agreed-they were awesome!!He was almost finished ( 4 pieces of fish and MANY hushpuppies) before I had a chance to sit down at the table. I left the whole kernal corn(for DD) and the jalapenoes( for FIL) out of the hushpuppies. To the fish I added garlic powder and Tony's to the breading. It was WONDERFUL!! We might have this again tomorrow since it's Good Friday! ;)

Turned out great and my whole family enjoyed this! I also made Cracker Barrel Green Beans Cracker Barrel Green beans and it seemed to compliment it very well. Next time I make this recipe I think i'll at a little cajun seasonings to the catfish to give it a little more ump. Thanks for posting!

Absolutely wonderful. They were fluffy and delicious. I added a lot more jalapenos 'cause we like spice. Thanks for a great recipe, it's a keeper.

I only made the hush puppies as I love them (now hubby does too) and they turned out so good, just the way I remember them being when I was a kid. Thanks for the recipe and needless to say, I'll be making the catfish as soon as I can!

I made the hush puppies to go with my pork roast on the weekend, the only thing I did different was I doubled the recipe, fryed them in Canola oil, added in salt and pepper and increased the jalapeno peppers, I made them in advance and just crisped them up in the oven before dinner. We all enjoyed them very much, they are so light and fluffy, a wonderful addition to my dinner, Thanx Dee for sharing!....Kitten:)
