Fried Cod for Fish and Chips With Tartar Sauce

  • Cut each fillet into 3 pieces and dry on paper towels.
  • Heat the fat until the end of a wooden spoon bubbles, about 375*.
  • Mix flour with salt and pepper in a flat dish.
  • Mix egg and water in a bowl.
  • Dredge cod pieces on all sides and shake off excess flour.
  • Dip dredged pieces into egg wash and shake off excess egg.
  • Dip into flour once again and shake off excess flour.
  • Fry in hot fat until the pieces are nicely browned.Don't crowd the pan. Depending on the thickness of the fish it could take 2 to 5 minutes. Try to turn no more than once.
  • Drain on paper towels and serve with a lemon wedge, Recipe #406770 and fries.

  1. Followed direction to the letter and WOW. Light and yummy! Was not heavy or greasy at all. Served with oven fries and green peas. I used frozen ready to cook fish instead of fresh - very good with that!
     
  2. Outstanding- when frying anything, it's always the temperature that's most important. The wooden spoon hint was new to me and it works. Delicious!
     
  3. Made for my DH who esp asked for fried cod vs my usual go-to oven recipes. My fillets were *very lrg* & I got 4 servings of 2-pieces ea. The only chg I made was to use lemon pepper in the flour-salt mixture. The cod was not the least bit greasy & was served w/parslied potatoes & a broccoli salad. Thx for sharing this recipe w/us. I am sure my DH will ask for it often. :-)
     
  4. Made good sandwiches even though I only had small frozen cod fillets. Served on hamburger buns with sliced American cheese from the Deli and homemade tartar sauce. Will definitely make again with better fillets. Thanks for sharing your recipe.
     
  5. Very good! This is my first time making cod and I loved the batter. I usually don't use enough salt or pepper in other flour coatings. Thank you, this is a keeper.

  1. I did add 1/4 tsp. or so of reduced-sodium Lawry's seasoned salt to the flour mixture and a lesser amount of regular salt since I didn't have sea salt.

Hello Zaars and Zaarinas! Thank all of you who tried my 'memory' recipes and left such nice reviews and for taking such lovely pictures. I do appreciate your comments. My pet peeves about cooking are recipe reviews where the reviewer says, "I made the recipe exactly as written EXCEPT yada yada yada" and I don't like suggestive names or titles such as, "Better Than Sex". I don't know why anyone would eat anything that is 'sinful' or 'decadent' since decadent is described as being decaying. Also, PAP-RI-KA only has 3 syllables. VINAIGRETTE is pronounced vin-a-grette, not vinager-ette. It's mas-car-pone not mars-ca-pone. And I don't like cutesy adult baby talk,,, or metro chic names like delish, nutrish, yummo, sammy, BAM! Oh well, I make as many, or more, faux pas as the next guy especially in ASL!
