  • Wash quail& wipe dry.
  • Rub with salt& pepper.
  • Mix breadcrumbs& Parmesan cheese together.
  • Dip quail in beaten eggs, then breadcrumb mixture.
  • Fry in hot oil until quail is tender and browned on all sides.
  • Serve garnished with lemon and parsley if desired.
