- 1 1⁄2 cups left-over mashed potatoes, cold
- 1 egg
- 1⁄2 cup self-rising flour
- 1 teaspoon dried oregano, crushed
- 1⁄2 cup kraft pizza cheese, shredded (MOZZARELLA AND PROVOLONE)
- canola oil (for deep frying)
- 1⁄4 cup onion, minced
directions
- IN MEDIUM MIXING BOWL MIX WELL ALL INGREDIENTS EXCEPT FOR OIL.
- HEAT OIL TO 325 F.
- USE 1/2 OZ COOKIE SCOOP (1 TBSP) TO DROP POTATO MIXTURE INTO HOT OIL.
- DEEP FRY FOR 2- 3 MINUTES TILL GOLDEN BROWN, TURNING OCCASIONALLY TO COOK EVENLY.
- REMOVE FROM OIL TO PAPER TOWEL LINED PLATTER.
- SERVE HOT!

FOR SEVERAL YEARS NOW I HAVE BEEN RETIRED FROM ONCOLOGY (CANCER) NURSING. I CAN'T REMEMBER AT WHAT AGE I BEGAN COOKING...MAYBE FROM THE AGE OF 2? IT SERVES AS MY CREATIVE OUTLET. I HAVE TO KEEP A TIGHT REIN ON MY URGE TO MAKE CHANGES TO NEW RECIPES BEFORE I EVEN TRY THEM. SINCE FINDING RECIPEZAAR I FIND THAT I AM ACCUMULATING STACK AFTER STACK OF 4 AND 5 STAR RECIPES. IT HAS BEEN HEAVEN! MY HUSBAND HAS NOT YET COMPLAINED OF THE TIME I SPEND BROWSING THROUGH ALL THE RECIPES LISTED HERE...HE KNOWS THAT IN JUST A SHORT TIME A NEW ENTICING AROMA WILL BE TEASING UP HIS APPETITE FOR THE NEXT NEW DISH TO COME FROM MY KITCHEN.
