My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully.
NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with.
Wow, simply delish! I have never made fried okra from scratch before! No more store bought in this house! I put in a little bacon grease in the egg mixture for added flavor. Also, I didn't chop my okra fine.

Oh, My Gosh Annie, These are so delicious and easy to make. DH loved them. I made half a recipe as there is only 2 of us, we really pigged out. I can hardley wait to make them for the rest of the family. Thank you SOOooo very much for posting this recipe.

I had about a pound of fresh okra, and wanted to try something other than regular fried okra. The mincing by hand was a bit tedious, but really managed the "slime factor". I enjoyed these little patties. As an experiment, I may try it without the baking powder next time, to see if I get more of the crispy fried okra texture throughout rather than a bread/cake texture in the middle. Thanks Miss Annie.
