- 1 kg pork ribs (clean, pound both side) or 1 kg pork chop (clean, pound both side)

Marinade
- 29.58 ml water
- 29.58 ml light soya sauce
- 1 egg yolk
- 14.79 ml meat tenderizer
- 4.92 ml bicarbonate of soda
- 14.79 ml cornflour
- 1.23 ml Chinese five spice powder
- 7.39 ml ginger juice
- 7.39 ml garlic juice

Serving sauce
- 150 ml champagne (1/2 rice bowl champagne 150ml, Babycham' Sparkling Perry)
- 44.37 ml lemonade
- 44.37 ml lemon juice
- 1.23 ml lemon zest
- 2.46 ml salt
- 29.58 ml sugar
- 14.79 14.79 ml potato starch (thickening agent will do) or 14.79 ml arrowroot (thickening agent will do)
- 29.58 ml water
directions
- Clean pork chop or spare ribs, use a mallet to pound both sides. Marinate for 3 hours, then deep fry till golden brown. Remove and drain well.
- Cook and reduce sauce. Adjust seasoning.
- Then dip (for a while)the fried pork chop in serving sauce piece by piece, remove and place on serving plate.
