- 2 (566.99 g) can minced clams, very well drained (reserve 1/2 cup juice)
- 9.85 ml baking powder
- 473.18 ml flour
- 2 eggs, well beaten
- 118.29 ml milk
- 2.46 ml salt
- 0.61 ml pepper
- oil or fat (for frying)
directions
- Preheat your oil or fat to 360°F.
- Sift dry ingredients together.
- Combine dry ingredients, milk and clam juice into a batter that is smooth and free from lumps.
- Fold in clams, mixing thoroughly.
- Drop from a spoon into hot fat and fry for about a minute or until golden brown on all sides.
- Serve with lemon wedges.

I tried with recipe in place of purchasing a box mix. The batter was really good but I think the seasoning is incorrect, both pepper and salt needs to be in creased, and add some more spices. I was told by those who were eating that there was not enough clams, so I am going to change it from 2 cans to 3 cans.

I absolutely love this recipe im from New England smack in the middle all my life ! born and raised and lived most my life and clam fritters where a big deal being made at most beach food stands and anywhere near a beach anyways since than moved to Georgia and can't find them here obviously so i neaded to find the perfect recipe for them and this is it !

These are great! Super light and fluffy! I halved the recipe and used 3 6.5oz cans of chopped clams (that I minced, and may use 4 next time). I also added an 1/8 tsp each onion powder, garlic powder, and old bay. I fried some and also did some like pancakes. The fried ones came out so light and crispy! Just perfect! Unfortunately for me, not eating fried food much the grease quickly made my stomach a little queasy, so I did the second half like pancakes. They turned out really well also! Not quite as fluffy as the fried, and not crispy, but still very good. Next time I will go the pancake route again and add some minced celery, onion and bell pepper and see what happens :) Thank you!
