The Most Incredible Extra Crunchy Onion Rings

These are the best onion rings I have ever had. It took a ton of experimenting for me to get it just so. I use Sam adams summer ale for the beer. I think it adds depth and flavor to the recipe

Ingredients:

Serves: 4-6

Yield: 2 cups

• 2 large vidalia onions
• 473.18 ml beer
• 473.18 ml flour
• 44.37 ml cajun seasoning
• 29.58 ml garlic powder
• 473.18 ml panko
• 236.59 ml instant potato flakes
• 709.77 ml peanut oil

Directions:

1. cut onions into rings.
2. mix beer, flour and seasonings.
3. mix panko and potato flakes.
4. heat oil to 375.
5. drag onions through beer batter and then roll in panko.
6. fry about four minutes, turning once.
7. drain on paper towels.
