The Original Buffalo Chicken Wings

  • Mix the wine vinegar with the milk, and allow the milk to curdle.
  • Add the yellow onion, garlic, parsley, mayonnaise, blue cheese, lemon juice, salt, pepper, and cayenne.
  • Mix well.
  • Refrigerate before serving.
  • In a large skillet melt the butter over low heat, and stir in the hot sauce.
  • Add more or less to taste.
  • Deep fry the wing pieces in small batches in peanut oil at 385f for about 10 minutes, or until browned and crisp.
  • Drain on paper towels ( if you wish to avoid the fat, bake the wings in a 400f oven for 25 minutes).
  • When all the wings have been fried, reheat the skillet containing the hot sauce, and toss the wings about in the sauce.
  • Serve with the dressing for a dip and celery sticks on the side.

  1. This has got to be the best blue cheese for wings recipe! I've made this for other people and they insist it's far better than any off the shelf blue cheese dressing. Great recipe!
     
  2. Rating only the dipping sauce. Tangy and tasty. I didn't have buttermilk, so this soured milk version served nicely. I used a Gorgonzola blue cheese and the blue flavor wasn't overpowering. I was worried that this was a bit runny after mixing it up, but it thickened up a bit upon sitting. My husband didn't care for it, so I'll keep looking for something we agree on, but I really enjoyed the mix of flavors in this one. Thanks for sharing.
     
  3. Though I didn't get the dipping sauce made- as I forgot the crumbled blue cheese (so just used blue cheese dressing) the wings themselves came out wonderful! Really made our non traditional Christmas dinner. Thanks for posting one of Frugie's recipes. It's a keeper.
     
  4. Have always made my wings this way, have never found a better way. Going to try the dipping sauce it sounds delish. Used to always watch Jeff, have a couple of his books. Probley where I learned to make these LOL. Thanks Shadows
